Sweet and Pretty: How to Sugar Pansies & Why You Should Try


If you're looking to add an elegant, edible flourish to your desserts, sugared pansies might be just the thing. These delicate flowers, coated in a sparkling sugar glaze, aren’t just stunning—they’re also surprisingly easy to make. Whether you’re decorating cakes, cupcakes, or cocktails, sugared pansies can elevate your creations to a new level of sophistication.


Why Sugar Pansies?

What You’ll Need


  • Fresh, edible pansies (ensure they’re pesticide-free and safe for consumption)

  • 1 egg white or aquafaba (for a vegan option)

  • Fine granulated sugar or superfine sugar

  • A small paintbrush

  • Parchment paper or a drying rack



How to Sugar Pansies



  1. Prep Your Pansies

    Gently rinse the flowers under cool water and pat them dry with a paper towel. Be careful to preserve their delicate petals. Remove any dirt or debris, and trim the stems close to the base of the flower.

  2. Prepare the Egg White

    Lightly whisk the egg white in a small bowl until it becomes frothy. If you’re using aquafaba, whisk it until it reaches a similar consistency. This will act as the “glue” to adhere the sugar.

  3. Paint the Petals

    Using a small paintbrush, gently coat each petal with a thin layer of egg white or aquafaba. Make sure to cover both sides for an even, sparkly finish.

  4. Sprinkle with Sugar

    Hold the flower over a bowl of fine sugar and sprinkle it generously over the petals. Shake off any excess to reveal a glittering coating. For an extra-fine look, you can sift the sugar before sprinkling.

  5. Let Them Dry

    Place the sugared pansies on parchment paper or a drying rack. Allow them to dry at room temperature for 12–24 hours, or until they’re completely firm to the touch.

  6. Store or Use

    Once dried, store the pansies in an airtight container lined with parchment paper. They’ll keep for several days, making them a perfect make-ahead garnish.
